Instant Pot Chuck Roast Recipe
Chuck Roast Ingredients:
- 1-1.5 lb chuck roast
- 1 packet Siete Taco Seasoning
- 2 tbsp butter or ghee
- 1 onion
- 2 garlic cloves
- 1 cup bone broth
- Organic corn tortillas (optional)
- Oaxaca or mozzarella cheese (optional)
- Greek yogurt, sour cream and/or guacamole (optional)
Directions:
- Turn the Instant Pot to the saute function and wait until it says hot.
- Pat the meat dry and season one side with ½ packet of Siete Taco Seasoning.
- Add 1 tablespoon of butter or ghee to the Instant Pot, and then place the seasoned side of the beef into the Instant Pot. Brown for about 5 minutes
- Season the other side with the other ½ of the seasoning packet, and then flip meat over to brown the other side for about 5 minutes.
- Remove meat and set aside.
- Add another tablespoon of butter or ghee to the Instant Pot, then add sliced onion and garlic cloves and saute for a few minutes.
- Pour in 1 cup bone broth to deglaze. Use a wooden spoon and scrub off any bits on the bottom of the Instant Pot.
- Place the beef back into the Instant Pot, close the lid, and turn the venting knob to the sealed position.
- Set to pressure cook for 40 minutes and let it naturally release for 15 minutes. [For meat that is more than 1-½” thick, add 20 minutes to cooking time for each inch of thickness.] Remove the lid carefully when done.
- Transfer the beef into a large mixing bowl, and shred it apart using two forks and then transfer back into the Instant Pot.
- Taste and add more salt if needed.
- You can eat it just like this, topped with shredded cheese, greek yogurt/sour cream, guacamole or make into tacos!
- For the tacos, dip the corn tortilla into the beef sauce and place onto a hot pan, add cheese to one half and cook until cheese is almost melted, place beef on top and enjoy with your favorite toppings!
